Removing the top 5 butcher block myths

Kitchen remodeling is not without its fair share of myths and misinformation camouflaged among the facts and realities, and butcher block myths seem to be at the top of the kitchen remodeling misconceptions, always ready with a story about bacteria or damage or expense. However, butcher block has always been a highly popular material for kitchen countertops, going back more than 100 years, proving that there?s a lot of good many people overlook. The top 5 butcher block myths are readily debunked with a little bit of information.

1. Butcher block harbors bacteria This myth is the most well known of butcher block myths, and many believe it?s true even though it?s very untrue. This myth most likely began because of the prevalence of wood cutting boards, which can?t go into the dishwasher, unlike plastic and glass, and it was believed that this meant they wouldn?t be as sanitary. Because butcher block is a comparable product, this logic was applied to the countertops as well, meaning that the kitchen countertops would never be disinfected. The truth is that while butcher block will have bacteria on it, so does plastic, natural stone, glass and any other countertop surface. The difference, however, is that the natural qualities within wood kill bacteria, which can?t be said for any other countertop material. Bacteria travel deep within the butcher block and dies far from the surface, leaving the tops clean and ready for use. Just clean with a blend of soap and water after use and your butcher block countertops will be bacteria free.

2. Butcher block scratches easily Similar to the previous myth, this one came about because the same reasoning used for wood cutting boards was carried to butcher block countertops, even though there are major differences. While it?s true that a wood or bamboo cutting board can show scratches from food preparation after just a few months, plastic and glass cutting boards will realize the same damage in the same amount of time, although the materials make it less noticeable. Butcher block, on the other hand, will be professionally sealed to hide the appearance of nicks and cuts, and because the wood is soft on knives it keeps them sharp to make chopping easier on you and less noticeable on the counter. Sealing the butcher block with mineral oil keeps it in top condition and blocks most scratches, and if a scratch does occur it can be sanded out (something that can?t be done with other countertop materials). Finally, because the knives are in top condition on a butcher block surface you won?t have to use as much pressure, which leads to less damage on the countertops.

3. Butcher block stains easily This is the third myth that originated from thinking other types of wood are the same as butcher block. While wood will stain when exposed to standing water or other liquids, your butcher block countertops will most likely be part of a kitchen island or specific chopping area, away from the kitchen sink where water spills are less likely. However, if your butcher block countertops do sit next to or around the sink, make sure there?s a ceramic or metal border to keep those inevitable water drops away from the wood. All countertops will need spills to be wiped up right away, especially natural stone, so this will be no different. Your butcher block counters will be sealed to expel water and as long as spills are wiped up there should never be a problem. The only time a butcher block countertop will stain is if it?s not taken care of, and if black rot appears it?s a sign that due diligence was not done.

4. Butcher block can be damaged by heat First, if there is a kitchen or home fire your butcher block countertops, being wood, will definitely not survive (along with most items in your kitchen). But a hot pot or pan placed on a butcher block won?t do any harm, unlike natural stone. If you?re the type of person who always puts a hot pan on the countertop, it?s best that you get a cooling rack (which can be made of wood!) or build a cooling rack into your butcher block to make sure a heat ring won?t form after time, but if it?s an occasional occurrence your countertops will hold up perfectly.

5. Butcher block can be expensive and time consuming to maintain This myth can be true if daily care and maintenance and the occasional resealing is forgotten or ignored, as it can take some undertaking to return damaged butcher block to its original luster. As long as spills are cleaned as they happen and mineral oil or other professional sealant is applied at least once or twice every year your butcher block countertops will remain in like new condition and need no more care or attention. On the unlikely occasion that a scratch or bit of damage occurs on your butcher block, you can sand and reseal the affected area in a matter of minutes for almost no cost. Most other countertop materials will need to be professionally repaired or professionally sealed, greatly increasing their overall cost. The worst case scenario is that butcher block is as expensive and time consuming to maintain as any other countertop material, and the best case scenario is that it?s far less costly in terms of both time and money.
